It has been incredibly cold this week and is to warm up this weekend. This hearty winter soup falls somewhere between a soup and a stew. I am going to make a batch of this over the weekend. Try adding pesto and parmesan swirled in at the end to give it more flavor. I always prefer deep bowls with garlic brushetta on top. Happy Weekend!
